Description
Provenance: The vineyard located in the municipality of Torano Nuovo a 310 meters above sea level.
Composition of the Subsoil: Medium-textured soil tending towards calcareous clay.
Grapes: Montepulciano 100%.
Characteristics of the system: The vineyard is trained in GDC, adapted over the years to the new qualitative production needs with 1250 stumps per hectare, year of planting 1978. The exposure is south-west
Harvest and winemaking period: The grapes, are collected, after a scrupulous selection, starting from the third ten days of October. The grapes are destemmed, pressed and vinified according to the traditional method in red with a long maceration of the skin in thermo-conditioned stainless steel winemakers in order to control the fermentation temperature which does not exceed 26°C. The wine has completed malolactic fermentation, follows its maturation process by resting in French oak tonneaux 15 – 5 hectoliters per 36 months, at the end it rests in the bottle 48 months before being put on the market
Organoleptic Characteristics: Color: ruby red with violet reflections in youth, as the years go by it tends towards garnet.
Perfume: on the nose it reminds of blackberry, the plum, the raspberry and then the spicy hint of vanilla is wonderful, tobacco, licorice; of great aromatic complexity.
Gusto: the balance between softness and tannin is such as to provide a perfect harmonious flavour, clean. It is a structured wine, very rich, enveloping, pulpy with great volume in the mouth and elegant, it is a long-lived wine that improves over the years.
Gastronomy: It goes well with roast red meat, braised, game, semi-mature cheeses, ideal with lamb and kid meat.
